Our Harvesting Process

Walnut harvesting is timed to align with full maturity and optimal kernel development. Our harvesting process prioritises quality outcomes, careful handling, and preparation for drying and storage.  

This approach supports quality, consistency, traceability, and dependable supply for wholesale buyers. 

95% of the trees we grow are the much sought after Chandler variety, a premium, globally prized variety of English walnut known for its smooth, light-coloured shell, thinness for easy hand-cracking, and exceptionally bright, buttery kernel.  

Harvest

Walnuts on our farm are harvested in shell at full maturity, supporting optimal kernel development and flavour. 

Harvest timing is carefully managed to: 

  • Maximise walnut kernel quality 
  • Support long term storage stability 
  • Ensure suitability for commercial drying and handling 
  • Align with seasonal conditions and orchard performance 


This approach ensures walnuts enter the supply chain in optimal condition for drying, storage, and further processing by wholesale buyers.
 

Drying

Following our walnut harvesting process, walnuts are transported off site to a commercial drying facility. 

Drying is undertaken to: 

  • Stabilise moisture content 
  • Protect kernel integrity 
  • Support safe storage and transport 
  • Maintain quality through extended supply chains 


Once drying is complete, walnuts are returned to the farm for final preparation and bagging.
  At this stage our wholesale partners  know the final tonnage available to purchase.

Harvest Timings

We start harvesting in Mid-March to early April, depending on the seasonal variations, and generally have all our product processed, dried, sized bagged and sorted by mid-April, meaning we are one of the first commercial available farms to bring a fresh crop of premium walnuts to the market each year. 

Our in-Shell Walnuts are available in the under 32mm sizing, which represents approx.14-15% of our total yield, with the 32mm to 36mm range accounting for approx. 46% to 47% and the much sought after 36mm plus sizing 32% of our annual harvest.
